A Time For Everything: Favorite Vegan Recipes and Necklace Love

~ Now for some yummy {mostly} vegan recipes ~

?{ Raw Vegan Chocolate Chip Cookie Dough Bites }
So easy to make and so good!!? Hubby loves these, well we all do!

Ingredients:
2/3 cup raw cashews (or almonds)
1/3 cup rolled oats (quick or old-fashioned)
1 tablespoon organic agave nectar
1 tablespoon maple syrup (optional)

1 teaspoon vanilla extract
Handful of cacao chips (or semi-sweet choc chips)

How to:
In a food processor, blend cashews/almonds and oats. Once they reach the texture of flour, add in agave and vanilla. Blend until dough forms. Mix in cacao chips with a spoon. Roll (or use a small scoop, it's easier and faster) into bite-sized balls.

Refrigerate or freeze. Enjoy!

I've tried these with both old-fashioned and quick oats and prefer old-fashioned for the more chewy, cookie-like texture.

Also, additional agave can be added for a sweeter taste, this is just how we like it, on the less-sweet side.
I keep containers of these in the freezer, they make a quick, easy go-to when wanting a little sweetness:)?

{ Six-Minute Vegan Chocolate Cake }

This is a quick and easy cake to make, my boys love this especially with a glass

of cold {soy}milk or a scoop of ice cream.? I've made it many times

{for family and friends} and it's always a hit!

?{ Vegan Sweet Potato Chili }

This is what I made the other night with our farm stand veggies and cannot even tell you how incredibly delicious it is!? I don't have a picture of the finished soup, it gets eaten so fast (we're on our second batch in two days), I never got the chance!:)

Ingredients

  • 1? large onion, chopped
  • 2? large (or 3 medium-sized) sweet potatoes, diced
  • 1 large or 2 small zucchini, diced
  • 1? garlic clove, chopped
  • 1? tablespoon? chili powder
  • 1? tablespoon? ground cumin
  • kosher salt and black pepper
  • 1? 15.5-ounce? can diced tomatoes
  • 2? 15.5-ounce? can black beans, rinsed
  • 3 tablespoon (or 1/2 of small can) tomato paste

Directions

  1. In a large pot, combine the onion, zucchini, garlic, chili powder, cumin, 1 teaspoon salt, and ? teaspoon black pepper. Add the tomatoes (and their liquid), beans, sweet potato, tomato paste and 1 cup water.
  2. Bring to a boil, then simmer until potatoes are tender and the chili has thickened.
  3. Serve with scallions, radishes, and tortilla chips.

{ Dr Fuhrman's Skinny Shake }
Can't say enough good things about Dr Fuhrman, he's the author of Eat To Live and Disease-Proof Your Child ~ Feeding Kids Right, (which was our go-to guide when the boys were younger...and still is:) and was extremely helpful to us early on.? When we found out I was pregnant with Ethan, we had a few consultations with him (via phone, he's in NJ) cause we really wanted to do it right, and he was a tremendous help!

Surprisingly my boys like this even though it's on the tart side,

depending on how hard you squeeze the lemon!:)

It's a refreshing and cleansing drink especially on a hot summer day!!Dr. Fuhrman?s Skinny Shake

Ingredients:
4 ounces pomegranate juice
1 cup frozen strawberries
1 cup of ice
Squeeze of lemon

Directions: Blend all ingredients in a high-powered blender.

I know these are bad pics and I don't even match, I was just too lazy

to change my shirt, but I promise this is so pretty in person

and *gasp* against a white or blue shirt, love!
